Undergraduate Programs

The College of Health and Human Services has thirteen undergraduate degree programs and twelve minors. 

Undergraduate Degree Programs

Students may obtain a B.A. degree in Family & Consumer Sciences: Child Development and Family Studies (CDFS) with an emphasis in Family Life Education or CDFS. The field of CDFS strives to improve the lives of children and families. As an integrative and interdisciplinary specialization, CDFS incorporates information from a variety of disciplines and focuses on utilizing the prevention approach to assist individuals and families.

Consumer Affairs is an option within the Department of Family and Consumer Sciences. The program is one of the leading undergraduate programs in the field. It offers an interdisciplinary study of the financial, legislative, psychological, sociological, and cultural factors involved in consumerism. Areas covered in Consumer Affairs are Consumer Advocacy and Protection, Financial Management, and Housing. In addition, the course work in Consumer Affairs is complemented by minors in several areas including Business Management, Economics, and Marketing.

The Criminal & Criminal Justice undergraduate program prepares students to become agents of positive change in the justice system through evaluation, research, ethical practice, and dedicated service. Graduates are also prepared to pursue advanced degrees in criminology/criminal justice, law, public affairs, and related graduate fields.

Nutrition & Dietetics 

Dietetics Concentration: Also known as the Didactic Program in Dietetics (DPD), this option fulfills the Academy of Nutrition and Dietetics (AND) academic requirements to prepare students to apply to the program to become entry-level registered dietitian nutritionist (known as RD or RDN).

Nutritional Science Concentration: This concentration prepares students for careers in research, public health, and industry, or serves as a useful science degree while preparing to enter other medical professions (pre-med, physician assistant, etc). Nutritional Science study is concentrated in biology, chemistry, nutritional science, and selected electives.

Food Science

Food science draws upon many disciplines, such as nutrition, chemistry, microbiology, math, marketing, and law. CSULB’s Family and Consumer Sciences (FCS) department offers a food chemistry and analysis lab to provide students with hands-on laboratory experience. Moreover, students can gain real-life industry experiences while enrolled in the program through the Food Science Internship course.

Fashion Design trains students to create apparel for various markets considering creative, technical, and cost factors. Students develop skills in design, textiles, draping and flat pattern making, garment construction, and computer-aided design. Fashion Merchandising concentrates on the planning, procurement, and promotion aspects of the fashion business. Students learn to research target markets, analyze business results and develop strategies that effectively meet the needs of consumers in the international market. The mission of the Fashion Merchandising and Design Program is to offer programs of study to develop professionals in apparel design, product development, production, and merchandising. Instruction, research, and service are combined to meet individual, family, and international community textile and apparel needs.

The mission of the undergraduate Health Care Administration Program at California State University Long Beach is to provide students with the knowledge, skills and abilities needed by entry-level health care professionals in an ethnically and culturally diverse community.

School Health Education

The School Health Education Option is designed for individuals who desire to pursue a professional preparation program leading to qualification as a health education teacher in middle, junior, and high schools. Graduates may also pursue other administrative careers within a school district such as health education curriculum coordinator, or a substance abuse prevention coordinator. In addition to core requirements, students seeking this option must also be admitted to the College of Education's Single Subject Credential Program. Students must successfully complete all required coursework and teaching assignments leading to a California Single Subject Teacher Credential.​

Community Health Education

The Community Health Education Option is designed for individuals interested in the links among lifestyle, social and physical environments, and good health. The occupational objective of those selecting this option is to serve as a community health educator in public or private health care agencies, voluntary organizations, medical clinics, or corporate settings. 

Hospitality Management is offered as a Bachelor of Science degree in the Department of Family and Consumer Sciences at California State University, Long Beach. It is designed to prepare students with the necessary background and expertise to excel as managers and leaders in the restaurant, foodservice, hotel, and lodging industries. The program provides a broad-based foundation in both academic and professional courses and includes hands-on practical experience.

The Department of Kinesiology offers undergraduate programs to prepare students for professional careers in physical education teaching (Adapted and K-12) or related disciplines ( Exercise Science, Fitness, Sport Psychology, and Leadership). The Department also serves the needs of students completing majors in other fields who find that certain aspects of Kinesiology are important to their professional objectives and personal interests.

Basic: The School accepts students into the nursing program at the sophomore level after they have completed all of their prerequisites. In five semesters, they graduate with a BSN degree and Public Health Certificate.

Trimester BSN: Similar to the Basic BSN except students attend school year-round and complete the program in two years.

RN to BSN: A Registered Nurse with an Associate degree is accepted into the BSN program and completes the BSN in 18 months.

Bachelor of Arts in Recreation with concentrations in:

  • Campus Recreation and Student Services
  • Tourism Management  

Recreation Therapy

Recreation Therapy has been identified as one of the fastest-growing fields of employment. Specialists in this field work in clinical and community settings using recreation as a tool to assist in behavioral health, post-injury rehabilitation and to improve the quality of life for individuals with disabilities. State and National Certification in therapeutic recreation is often required for employment in this field. The curriculum of this program prepares students for the California Board of Recreation and Park Certification (CBRPC)  exam and for the National Council for Therapeutic Recreation Certification (NCTRC) exam.

The goals of the BASW program are to prepare students for entry-level, professional, generalist social work practice and graduate social work education including advanced standing in Master of Social Work (MSW) programs.

The primary goal of the undergraduate program is to provide our students with a broad education in normal and disordered processes of speech, language, hearing, and swallowing.
