Nutritionist shares best time to eat bananas based on ripeness

Amanda Sauceda, a lecturer in nutrition and dietetics at Cal State Long Beach’s Department of Family and Consumer Sciences, spoke with HuffPost about how banana ripeness can influence blood sugar levels. She explained that underripe bananas are rich in resistant starch, which functions like fiber to help regulate blood sugar and nourish beneficial gut bacteria.
