In Word, Help, you can find ‘Assign a shortcut key to a symbol’. This is the help file for assigning shortcut keys to symbols and special letters.
The following are step-by-step instructions:
Start Word 2000 
1.Insert
2.Symbol
3.Select Font (normal text)
4.Select a letter such as ā
5.Shortcut Key
6.Press new short cut key, e.g. ctrl+a followed by 1. Or ctrl+1 followed by a.
7.Close
Done!
Next time, hold the control key and press a, release the key and press 1, you will get ā.
Follow the same procedures to assign Pīnyīn letters to new shortcut keys.
