The youngest brewmaster of the Austrian Brau A.G., Herr Dr. Seeleitner has taken over a formible task of controlling a brewery which produces not only a top-fermented beer, Edelweiss, but also a bottom -fermented one, Kaiser. It is rare to find both of these brewing technques under one roof. Dr. Seeleitner is handling it admirably, preserving the integrity of both styles, and maintaining the division of the two with a constant concern of impurities traversing from one to the other. Just think of the bottle of beer where the top-fermenting yeast for Edelweiss met the bottom-fermenting yeast for Kaiser. Even with the stronger yeast strain, there is no winner! As a drinker, you lose!

In an article with the caption: "Tradition mit Zeitgeist" (Tradition merging with today's Spirit") Dr. Seeleitner explains his attitude and position. Paraphrased from his German quote, athough the old and new in Kaltenhausen initially appear contradictory, and although tradition in Kaltenhausen is most significant, technology has accomodated much of the tradition of brewing. In Kaltenhausen Dr. Seeleitner has maintained an appreciation of the past along with the introduction of the latest knowledge of brewing, and all of his beers are award-winning beers.
