Daytime Accelerated MBA

lassenMeet Scott Lassen, AMBA 6 class of 2011. After working at PETCO as an assistant store manager, Scott now owns and runs a franchise of Fresca’s Mexican Grill—a restaurant that features healthy, flavorful Mexican food in Woodburn, Oregon, just outside of Portland.  Located in an upscale retail center, Scott opened the doors of Fresca’s, on May 29, 2013.

MBA Office: So Scott, tell us, what lead to this exciting opportunity?

Scott: My undergraduate school, Missouri Western State University (MWSU) in Saint Joseph, Missouri played the biggest part in it. MWSU offers a unique entrepreneurial program to its alumni and graduating seniors.  It basically involves preparing a business plan and presenting it to a committee. Steven Craig, of Craig Realty Group in Newport Beach, offered the loan for the business. More about Enrepreneurship Program at MWSU
